Al Carbón Pollos a la Brasa was founded in 2015 in San Mateo, California, with the goal of sharing the authentic taste of Peruvian-style rotisserie chicken with the Bay Area. Inspired by a beloved Peruvian tradition, our signature pollo a la brasa is marinated with classic spices and slowly roasted over real charcoal, creating its unmistakable smoky flavor, crispy skin, and juicy meat.
From the beginning, Al Carbón has been committed to quality, consistency, and tradition, becoming a welcoming place for families and food lovers from all backgrounds.
In 2024, we proudly expanded with the opening of our second location in Modesto, California, bringing the same authentic flavors and standards to a new community.
Today, Al Carbón Pollos a la Brasa continues to celebrate Peruvian culture through honest cooking, tradition, and great food shared around the table.
